We recently visited Spain to inspect distillation facilities, and to meet with suppliers. Buying trips like these always teach us something new about the raw materials we supply, and about the processes and people involved in each case. Getting out of the office, and to sunnier climes is not bad either! Here are some photographs of the Spanish distillery where the main products processed are cypress and herbs. The cypress needs to be chopped up before distillation, and both the needles and twigs are used. Spent wood is used as fuel. Cypress essential oil has a pine-like, refreshing odour, with nuances of juniper berry, olibanum and spice, and with a sweet, almost balsamic drydown.
